By this point I think you all know how much I love Tex Mex food. I swear I could eat it every single day. These chicken fajitas are one of my “go to” Tex Mex meals. The grilled chicken and sauteed peppers really take this dish to the next level. Enjoy this dish fiesta style with a group of friends or spice up a casual week day. Either way it is sure to please! Chicken Fajitas

2 boneless, skinless chicken breasts
1 packet taco seasoning
1/2 lime, juiced
1 green pepper, sliced
1 red pepper, sliced
1 orange or yellow pepper, sliced
1 yellow onion, sliced
2 tablespoons butter
6 flour tortillas
cheese, sour cream, salsa, and guacamole for topping (optional)
Directions
- Place chicken in large plastic bag or tupperware. Add lime juice and taco seasoning. Mariate for 4 – 6 hours before grilling.
- Once chicken has been marinated, add to grill and cook until the chicken has reached an internal temperature of 165 degrees.
- While chicken is cooking, add sliced peppers and onion to a large saucepan. Add butter and cook over medium low heat until the veggies become soft and translucent.
- Once the chicken has been cooked, shred and serve alongside onions and peppers. Enjoy!
Notes
- I like to heat my tortillas on the stove before serving.
- I usually serve my fajitas with sour cream, cheddar cheese, salsa and guacamole you can serve however you like!
