1 cup butter, softened
1 1/2 cup flour
1 cup brown sugar
1/2 cup white sugar
2 eggs
1/2 TSP salt
1/2 TSP baking soda
1 TSP cinnamon
1/4 TSP nutmeg
1/2 TSP honey
2 TSP vanilla
3 cups quick cooking oats
Directions
- Preheat oven to 350 degrees. Line baking sheets with parchment paper. Set aside.
- In standing mixer (or using an electric mixer) beat together butter and sugar until fluffy. Add in eggs one at a time and then add honey and vanilla. Beat until well mixed.
- In a separate bowl, mix together flour, salt, cinnamon, nutmeg and baking soda. Once mixed, slowly add it to the wet mixture. Mix just until combined (do not over mix!). Fold in oats.
- Add drops of dough onto baking sheets. Bake for 10 – 12 minutes or until cookies are done. Transfer to cooling rack and enjoy!
