This is one of my all time favorite dishes. Seafood combined with a creamy pasta is music to my ears. Sometimes there is really nothing better than a big plate of pasta and a glass of vino… Enjoy!
Shrimp Scampi

1 Pound Angel Hair Pasta
1/2 Pound Fresh or Frozen Shrimp
1/2 Stick Butter
1/2 White Onion
1 Cup Cherry Tomatoes
3 Cloves Garlic
1/2 Cup Heavy Cream
1/4 Cup White Cooking Wine
1 Cup Parmesan
1 Lemon
2 Tablespoons Olive Oil
Salt, Pepper and Red Pepper Flakes to Season
4 Tablespoons Basil
Directions
- Start by boiling a large pot of water and season with salt. Add pasta and cook according to package.
- Heat olive oil and 2 tablespoons of butter in pan over medium high heat. Add shrimp and squeeze lemon juice in the pan. Season with salt, pepper and red pepper flakes. Cook until shrimp is cooked through. Once shrimp is cooked, deglaze pan with cooking wine. Cook until liquid reduces by half. remove shrimp from pan.
- To combine sauce, use the same pan you cooked the shrimp in. Add the rest of the butter, and add onions, garlic, basil and tomatoes until tender. Then add heavy cream and cheese. Season with salt, pepper and hot pepper flakes.
- Combine pasta with sauce and add basil. Then add the shrimp to mixture and serve.
Wine Pairing: A dry Sauvignon Blanc would pair great with this dish! My favorite is Kim Crawford. If you prefer red, a Pinot Nior would pair great, one of my recent favorites is Folly of the Beast.
