By now you all know how much I love pasta! I also love bison so this recipe is music to my ears! It’s spicy but oh so creamy and will most definitely fulfill your pasta needs. Enjoy!
Bison Italian Sausage & Spinach Pasta

1 Pound of Rigatoni
1 Pound Bison Italian Sausage (I get my bison from Nebraska Bison, it’s delicious!)
2 Tablespoons Olive Oil
1/2 Yellow Onion
3 Cloves Garlic
2 Cups Spinach (fresh or frozen)
1 Cup Cherry Tomatoes
1/4 Cup White Cooking Wine
2 Tablespoons Tomato Paste
1Cup Heavy Cream
1/2 Cup Parmesan Cheese
1 TSP Oregano
1 Tablespoon Red Pepper Flakes
Salt & Pepper
Directions
- Boil water in large sauce pan. Add pasta and cook according to package. Set aside.
- Heat olive oil in large pan. Dice onion, tomatoes and mince garlic. Add to pan. Add bison to pan, season with salt and pepper and cook over medium heat until bison is cooked through.
- Once bison is fully cooked, add white wine to deglaze the pan. Cook until liquid reduces by half. Add spinach, tomato paste, spices, heavy cream and cheese. Cook on medium low heat for about 15 minutes mixing occasionally.
- Add pasta to mixture and stir well and enjoy!
