A creamy pasta is my favorite but add sweet Italian sausage to the mix and OH MY it’s out of this world. I mean who doesn’t love a little penne with some vino?

12 Ounces of Jar or Homemade Pasta Sauce (Rao’s is my go to)
1 Pound of Penne
2 Cloves Fresh Garlic
2 Roma Tomatoes
1/3 Pound Sweet Italian Sausage
1/2 Cup Heavy Cream
1/4 Cup Pecorino Romano
1/4 Cup Grated Parmesan
5 – 6 Fresh Basil Leaves (and additional for garnishing)
1 TSP Olive Oil
1/8 Cup White Cooking Wine
1/2 TSP Red Pepper Flakes (or more if desired)
Salt & Pepper (to taste)
Directions
- In large sauce pan add olive oil and heat over medium high. Add in sausage, tomatoes (diced) and garlic. Cook until sausage is cooked through around 15 minutes.
- Once sausage is cooked, add white wine to deglaze the pan. Cook until liquid reduces by half.
- Add in pasta sauce and mix well. Stir in cream and cheese. Add fresh basil. Mix on medium low heat for 15 – 20 minutes.
- While the sauce is cooking boil water in a large sauce pan. Add penne and cook according to directions.
- Once pasta is al dente, add to sauce mix. Mix well. Top with more basil and cheese. Enjoy!
Notes
- If you prefer spicy Italian sausage, that would work well too!
Wine Pairing: tonight i’m serving Benziger cabernet sauvignon out of Sonoma. It pairs great with this dish!
