Fresh fish with a nice fresh salsa is one of my favorite cuisines! This corn & black bean salsa is great on just about anything but when served over fresh fish and it’s out of this world!
Seared Tilapia w/ Corn & Black Bean Salsa

Fresh Tilapia
1 TSP Olive Oil
1/2 TSP Salt
1/2 TSP Black Pepper
1 TSP Chili Lime Seasoning
1/2 TSP Garlic Powder
1/4 TSP Cayenne Pepper
1/2 Lime
- Corn & Black Bean Salsa
1 Can Corn (Drained)
1 Can Black Beans (Drained)
1 Jalapeno
1/2 Green Pepper
1/2 Red Onion
2 Tablespoons Fresh Cilantro
1/2 Lime
2 TSP Salt
2 TSP Pepper
2 TSP Garlic Powder
Directions
- To make salsa, drain both corn and black beans and add to a mixing bowl. Finely dice the jalapeno, onion, green pepper and cilantro. Add to the bowl. Season with salt, pepper and garlic powder. Add 1/2 lime juice. Mix well.
- To sear the fish, put olive oil in skillet and heat over high heat.
- While the oil is heating, season fish with the above seasonings. Once the oil is heated, add fish to skillet searing for about 4 – 6 minutes on each side or until cooked through.
- Halfway through cooking, squeeze 1/2 lime juice in pan. Once cooked through remove from heat and serve. Enjoy!
Notes
- I like to put this dish over a bed of cilantro lime rice.
Wine Pairing: Sauvignon Blanc goes great with this dish!
