This dish is basically a combination of all my favorite things. Mushrooms, onions, spinach and pasta all combined in a creamy, cheesy sauce… it really doesn’t get much better. This is such an easy dish to prepare it’s great for a weeknight dinner!
Creamy Mushroom & Spinach Pasta

1 Half Yellow Onion
1 Cup Baby Bella Mushrooms
2 Cloves Garlic
4 Tablespoons Butter
1/2 Pound Bow Tie Pasta
1 1/2 Cup Heavy Cream
1 Bag Spinach
1 Cup Grated Parmesan
2 Tablespoons White Cooking Wine
Salt, Pepper, Red Pepper Flakes (to season)
Directions
- Start by melting butter in saucepan over medium low heat. Add sliced onion. Saute until onion is cooked halfway through.
- Turn heat up to medium high, add mushrooms and garlic and finish sauteing in pan. Lastly add spinach and cook for about 3 minutes. Add wine to deglaze the pan and cook off the remaining liquid.
- Add heavy cream & cheese and mix until it combines a nice sauce. Continue to simmer over low heat.
- Cook pasta according to package. Add pasta to sauce. Enjoy!
Wine Pairing: Pinto Noir, I found a great Pinto Noir at Total Wine called Red Pony Ranch out of California. I would highly recommend it with this dish.
