Ok so by now you probably know that I’m obsessed with anything TexMex. After the holiday’s I’ve been trying to get back into the swing of healthy eating & these shrimp tacos are not only giving me all the feels but they are also great on the waistline! I mean who doesn’t love a healthy taco alternative?!
Shrimp Tacos w/ Mango Salsa

12 Shrimp (fresh & uncooked)
1/2 Lime
1 Tablespoon Olive Oil
Salt, Pepper, Chili Powder, Garlic Powder (for seasoning shrimp)
1 Tablespoon White Cooking Wine
4 Flour Tortillas (small)
1 Avocado
- Mango Salsa
1 Mango
1 Jalapeno
1/2 Red Onion
2 Tablespoons Cilantro (optional)
1/2 Lime
Salt, Pepper, Garlic Powder
Directions
- Start by making the mango salsa. Dice mango, jalapeno, onion and cilantro finely. Once all chopped combine. Season with salt, pepper and garlic powder. Add 1/2 lime juice. Mix well. Set aside.
- Make an avocado paste by mashing 1 avocado. Season with salt, pepper and garlic powder. Set aside.
- Heat olive oil in pan over medium high heat. Add shrimp (tail off). Season with chili powder, salt, pepper and garlic powder. Cook for 7 – 10 minutes. Add lime juice and white wine to deglaze the pan.
- Heat flour tortilla in pan. Once heated, add avocado paste, shrimp and top with mango salsa. Enjoy!
Notes
- This mango salsa also pairs well with Salmon over rice or even on a salmon burger!
Wine Pairing: sauvignon blanc such as Kim Crawford would pair great with this dish.
