If you know me you know I do my fair share of indulging in not so healthy foods. With that being said, during the week I really try to eat clean and save my guilty pleasures for the weekend or a special occasion. This pizza is one of my favorite, healthy weeknight meals. To make it even easier on myself, I use a store bought crust to make prep time a breeze!
Cauliflower Crusted Pizza

Store Bought Cauliflower Crust (My favorite is from Trader Joes)
Pizza Sauce (Rao’s is my favorite)
2 Tablespoons of Olive Oil
1 Tomato
1/2 Cup Arugula
1/4 Cup Red Onion
1/4 Cup Roasted Red Peppers (I love Trader Joes sold in a jar)
1/2 Cup Parmesan Cheese
Balsamic Glaze
1 Tablespoon Fresh Lemon Juice
Black Pepper & Red Pepper Flakes (optional)
Directions
- Cook cauliflower crust according to instructions.
- Once crust is cooked, add pizza sauce and toppings (except arugula and balsamic) and broil for 4 – 5 minute until bubbly.
- Mix arugula with olive oil, ground black pepper, crushed red pepper flakes (optional) and fresh lemon juice.
- Remove pizza from oven, add arugula, drizzle with balsamic glaze and serve.
