Alight folks, it doesn’t get much easier than this! Salmon is another healthy weeknight dinner that I cook often. I love salmon paired with a fresh arugula salad which is what I did tonight. SO fresh and SO simple. There’s really nothing better after a long day of work.
Seared Salmon w/ Arugula Salad

Fresh Salmon Filet
Olive Oil
Arugula
Fresh Lemon Juice
Seasonings: Onion Salt, Ground Black Pepper, Red Pepper Flakes (optional), Garlic Salt
Directions
- Season salmon with onion salt, black pepper and garlic salt.
- To sear salmon, heat olive oil in pan on high heat. Once oil is hot, add seasoned salmon to pan and sear on both sides for 2 minutes (or until golden). Finish cooking in oven at 400 degrees for about 7 minutes or until fully cooked.
- Assemble arugula salad by tossing arugula with olive oil, fresh lemon juice, red pepper flakes (optional), and black pepper.
