This is one of my very favorite ways to eat Kale. It pairs great with Salmon, Chicken or even on it’s own. It’s so delicious and FULL of great nutrients.
Roasted Kale

3 cups of fresh kale
1 cup diced tomatoes
1/3 cup diced sundried tomatoes
3 cloves chopped garlic
3 tablespoons olive oil
1 tablespoon balsamic glaze
salt, pepper & red pepper flakes to season
Directions
- Preheat oven to 400 degrees.
- Roughly chop the kale. Add to an oven safe bowl or pan. Add tomatoes, sundried tomatoes, garlic, olive oil and balsamic. Season with salt, pepper and red pepper flakes.
- Mix together well & bake for 20 minutes or until edges are a bit crispy. Serve warm & enjoy!
Wine Pairing: Cabernet Franc serves well with this dish.
