Is there anything more comforting than potatoes on a cold fall day? I don’t know about you, but I could eat potatoes every single day of the week and twice baked is one of my very favorite way to eat them. They are so warm, creamy and decadent. This dish will be sure to be a family favorite!
Twice Baked Potatoes

4 Russet Potatoes, Cleaned
1 Tablespoon Olive Oil
1/2 Stick Salted Butter
1 Cup Bacon, Cooked & Chopped
1/3 Cup Sour Cream
1 Cup Cheddar Cheese
1/4 Cup Whole Milk
2 Green Onions
1 Teaspoon Salt
1 Teaspoon Garlic Salt
Pepper To Taste
Directions
- Preheat Oven to 400 Degrees.
- Place potatoes in baking dish. Coat with olive oil and sprinkle with salt and pepper. Bake for 1 hour.
- Reduce heat to 350 degrees and remove potatoes from oven. Let cool for 5 minutes.
- Cut opening in the top of the potato. Gently remove filling from the skin, leaving the skin in tact and creating a potato boat. Add filling to large mixing bowl.
- Add 1/2 the bacon, 1/2 cup of cheese, sour cream, butter and milk to bowl. Mix well. Season with salt, garlic salt and pepper. Place filling in the potato boats.
- Once potato boats are filled, add remaining cheese, bacon bits and green onions.
- Bake for 20 minutes or until the cheese is bubbling. Serve warm & enjoy!
