Memorial Day weekend has passed and summer is on my mind! This salad is so refreshing and packed with flavor. It will most definetly be your summer salad go to! The strawberries add a the perfect amount of sweetness, the almonds add a nice crunch and the vinaigrette pairs perfectly. Enjoy!
Strawberry Spinach Summer Salad

- Salad
1 bag baby spinach
1 cup fresh strawberries, halved
1/2 cup feta cheese, crumbled
1/3 cup red onion, sliced
1/4 cup slivered almonds, toasted
- Vinaigrette
1/4 cup balsamic vinegar
1/4 cup olive oil
1 tablespoon dijon mustard
1 tablespoon honey
Salt & pepper to taste
Directions
- To make the vinaigrette start by adding balsamic vinegar to a small saucepan. Bring to a boil over medium heat and boil until liquid reduces by half (about 3 minutes). Pour into a bowl and add the rest of the ingredients. Whisk until well blended. Season with salt & pepper and set aside.
- Preheat oven to 350 degrees. Toast almonds for 7 – 10 minutes. Let cool.
- Start assembling the salad by placing spinach in large bowl. Add strawberry halves, onions, feta and cooled almonds. Toss together with dressing and serve!
Notes
- This recipe goes great with grilled chicken!
Wine Pairing: This recipe would pair great with a sauv blanc!
