As you all know by now I live for Mexican food. Honestly, I think I could eat it every single day. This is one of my all time favorite TexMex dishes. I usually serve it along side Spanish rice and refried beans. Enjoy!
Beef Enchiladas

1 Pound Ground Beef
1 TSP Salt & 1 TSP Pepper
1/2 Cup Finely Chopped Onion
2 Small Cans Enchilada Sauce
2 Cups Shredded Cheddar Cheese
6 Medium Tortillas
1 Can Green Chilis
1/2 Can Refried Beans
2 TSP Cumin
1 TSP Chili Powder
1 TSP Garlic Powder
Directions
- Heat oven to 350 degrees and grease 9 x 12 inch pan. Add a layer of enchilada sauce to pan. Set aside
- Start by browning beef in large pan. Add diced onion, green chilis and season with salt and pepper. Cook on medium high heat until browned. Once browned add cumin, chili powder and garlic powder. Mix well and set aside.
- Heat tortillas on stove until browned. Assemble enchiladas by coating tortilla in enchilada sauce. Add a layer of refried beans, ground beef and cheese. Roll tortilla and add to pan.
- Once all enchiladas have been assembled top with remaining enchilada sauce and add cheese over the top.
- Bake for 18 – 22 minutes or until bubbly. Enjoy!
Notes
- I like to top with sour cream, lettuce and diced tomatoes
