I love potatoes in all forms. They just scream comfort to me. Give me a potato with just about any meal and I’m happy. This roasted potato recipe is my absolute favorite way to eat them roasted. The fresh garlic, crisp onions and melted butter really take these to the next level. This side dish will go along great just about anything!
Roasted Garlic Potatoes

6 Yellow Potatoes
1/4 Yellow Onion
3 Cloves Garlic
2 Tablespoons Olive Oil
2 Tablespoons Butter
1 Tablespoon Salt
1 Tablespoon Pepper
1/2 Tablespoon Garlic Powder
1 Tablespoon Parsley
Directions
- Preheat oven to 450 degrees.
- Dice potatoes so they are into medium sized cubes. Make sure to keep the size of the cubes consistent so the potatoes cook evenly. Add to baking dish. Chop onions and add to potatoes. Drizzle potatoes with olive oil and season with salt, pepper and garlic powder. Add butter in small dollops to top of potatoes. Roast for 40 minutes or until cooked through.
- Top with parsley & enjoy!
Notes
- If you like your potatoes less crispy – cover the baking dish with foil for the second half of baking.
