I typically try to eat a very healthy lunch throughout the week and then splurge more for dinner time. In an effort to eat healthy and save money I usually stick to meal prepping on Sunday. Today, I am making a very healthy (and delicious!) chicken salad.
Lite Chicken Salad

2 Chicken Breasts (cut into cubes)
1 Apple (diced)
1/2 Lemon (juiced)
1 Shallot (diced)
3 Stalks of Celery (diced)
1/3 Cup Non-Fat Greek Yogurt
1 TSP Pepper
- Seasoning for Chicken
1/2 TSP Salt
1/2 TSP Pepper
1/2 TSP Garlic Powder
1/2 TSP Onion Salt
Directions
- Season Chicken with the seasonings listed above. Grill chicken on gas or charcoal grill on medium high heat until internal temperature is 165 degrees.
- Once chicken is cooked, dice and set aside.
- Cut the apple, shallot and celery. Place in mixing bowl. Add chicken, lemon juice and yogurt. Mix well & season with pepper. Enjoy!
Notes
- I like to serve this chicken salad on toasted wheat bread with arugula!
