Pasta and Tex-Mex are two of my favorite cuisines so why not make them into one scrumptious dish? This pasta is super creamy and so flavorful! It’s a fun and unique way to spruce up pasta! Enjoy!
Chicken Fajita Pasta

2 Chicken Breasts
1 Pound Fusilli Pasta
1/2 Green Pepper
1/2 Yellow Pepper
1/2 Red Pepper
1/2 Red Onion
2 Cloves Garlic
2 Tablespoons Butter
1 Cup Heavy Cream
1 Tablespoon Olive Oil
1 Packet of Taco Seasoning
1 Cup Mexican Blend Cheese
1/8 Cup Cream Cheese
Salt and Pepper to Season
Directions
- Boil water in large sauce pan. Cook pasta according to package and set aside.
- In large skillet add olive oil and cook chicken (chopped into cubes) on medium high heat. Season with salt, pepper and 1/2 packet of taco seasoning. Once cooked remove chicken from pan and set aside.
- Dice onions and peppers and mince the garlic. In the same pan you cooked the chicken, add butter, peppers, onion and garlic. Cook on medium heat until vegetables are tender. Add chicken back to mixture along with heavy cream, the second half of the taco seasoning and cheese. Turn heat down to low. Mix well and let simmer for 10 – 15 minutes.
- Add pasta to mixture and stir well. Enjoy!
