Tuscan Shrimp Pasta

1/2 Pound Fresh Uncooked Shrimp
1 Pound Angel Hair Pasta (or pasta of your choice)
2 Cloves Garlic
1 Can Crushed Tomatoes
1 – 2 Tomatoes (diced)
1/2 White Onion
1 Tablespoon Olive Oil
1/4 Cup Heavy Cream
1/4 Cup Parmesan Cheese
1/4 Cup White Wine
1 Lemon
Fresh Parsley
Salt, Pepper and Red Pepper Flakes (optional)
Directions
- Start by cooking shrimp. Add uncooked shrimp (tail off) to pan with olive oil. Add fresh lemon juice, garlic, onions, salt pepper and red pepper flakes. Once mostly cooked add white wine to deglaze the pan. Let liquid reduce by half. At this point shrimp should be cooked.
- Boil water in a large pan and add pasta. Cook according to package.
- While pasta cooks, add tomatoes to shrimp. Mix well. Add cream and cheese. Season with salt, pepper and red pepper flakes. Let simmer.
- Once pasta is cooked add to shrimp mixture.
- Top with extra cheese and parsley.
Wine Pairing: A dry Chianti would go great with this dish! My favorite affordable Chianti is Da Vinchi or Bellini. If you are looking for a more upscale wine, Altesino makes a great Brunello!
