This is one of my go to side dishes. It’s super hearty and goes great with just about everything. One of my favorite things to serve this with is a grilled pork chop, salmon or baked chicken!
Roasted Kale w/ Red Potatoes

1 Package of Fresh Kale
2-3 Red Potatoes
1 Tablespoon Olive Oil
3 Cloves Garlic (Minced)
1/2 Cup Cherry Tomatoes
1 Tablespoon Parmesan cheese (optional)
Salt, Pepper and Red Pepper Flakes
Directions
- Preheat oven to 400 degrees. Chop potatoes so they are evenly diced into cubes. Assemble in pan and coat with 1/2 tablespoon of olive oil and two cloves of garlic. Season with Salt & Pepper.
- Bake potatoes for 25 minutes or until tender.
- While the potatoes are baking, chop kale and cherry tomatoes. Mix together and coat with the rest of the olive oil and garlic. Season with salt, pepper, cheese and red pepper flakes.
- Once potatoes are cooked. Add kale and roast for another 10 minutes or so until kale gets nice and crispy on the top.
Notes
- Serves well with Chicken, Pork or Fish
Wine Pairing: This dish would pair great with a dry chardonnay if you are going white or a pinto noir if you prefer red. One of my favorite pinto nior’s is Meiomi and my favorite chardonnay is Sonoma-Cutrer.
